Coles Meat Loaf
Ingredients
One loaf of Coles garlic bread, toasted crisp and ground in food processor
1 pound chuck
1 pound ground Pork
1 pound of ground Veal or Turkey
9 eggs
1 cup of 1% milk
1 can of cream of mushroom soup
6 stalks of finely chopped celery
4 large carrots finely chopped
2 large onion s finely chopped
2 teaspoons of salt
1 teaspoon fine grind black pepper
2 teaspoon of garlic powder
2 tablespoons of Worcestershire sauce
1 tablespoon of Soy sauce
1 cup of ketchup
Directions
Add first 7 ingredients in large bowl.
Sweat next 8 ingredients in covered pot until very soft, about 10 minutes, then add to first 7 ingredients and mix well with hands.
Using large loaf pan (spray with cooking spray first) form into a dome and add ketchup to top. If you don’t have a large loaf pan, use two smaller ones. Place loaf pan on foil covered cookie sheet.
Bake in preheated 325 degree oven until instant read thermometer reads 155 degrees (about 1 hour).
Remove from oven and drain off excess oil, saving 1/2 cup for gravy, and cover with foil for 30 minutes.
While meat loaf is resting make your favorite brown onion gravy using drippings from meat loaf.
Remove loaf from pan and lest rest another 10 minutes.
Slice and serve with mashed potatoes, gravy, green beans and thick sliced country buttered bread.
