Dev’s Yummalicious Breakfast Sandwich

Ingredients

1 Package of Cole’s Mini Garlic Bread
3 Extra Large Eggs
1 tblsp butter
2 Slices Mozarella Cheese
4 Pieces of Ham – med sliced
1 Large Summer Tomato
10 pieces of crisp bacon or 1/4 cup bacon bits
1/4 cup Mayo

Directions

Open your Coles Mini Loaf and seperate to cook as package suggests.
While cooking your garlic bread, place your butter in a frying pan and fry your 3 eggs till done over medium – we want the yolk to be soft but not runny.
Cook your bacon and crumble or measure out and pour your bacon bits into a small bowl.
Dice your tomato and add the mayo and mix with bacon.
When the garlic bread is done and the bread is warm and crispy remove from the oven and layer your sandwich.
On one side of the garlic bread, place the eggs in a row overlapping to fit.
Cover with the 4 slices of ham then the two slices of mozzarella.
Put under the broiler for just a minute or two for the cheese to melt.
Spread the Mayo-bacon and tomato mixture on the top slice and close the sandwich.
Slice into four slices and serve.

This is my sons favorite Sunday breakfast but can be served at a brunch as well. It’s decadent!!
