Quick ‘n Easy Zesty Italian Bread Salad
INGREDIENTS:
1 loaf of Cole’s Zesty Garlic Bread
1 pound of tomatoes
1 red onion
1 cup of basil leaves
1 log of fresh mozzarella (approximately 1/2 pound)
1/4 cup of balsamic vinegar
1/2 cup of balsamic dressing
3 romaine hearts
1 pound of chicken
2 tbsp. garlic powder
Salt and pepper to taste
DIRECTIONS:
1. Open your Cole’s Zesty Garlic Bread and prepare according to instructions.
2. As the garlic bread bakes, chop tomatoes, red onion, mozzarella, and basil leaves. Stir together in a bowl. Combine with balsamic vinegar and set aside. Stir occasionally.
3. Dice chicken and season with garlic powder, salt, and pepper. Place in skillet.
4. Working in batches, brown the chicken and set aside.
5. Chop the romaine hearts and place in large bowl. (It must be large as you will be mixing!).
6. Coarsely chop the garlic bread into bite-sized pieces.
7. Add tomato mixture to the romaine lettuce. Mix well.
8. Add chicken and garlic bread to the romaine lettuce, mixing well.
9. Toss mixture with balsamic dressing, and serve!
