Ruben Panini

Ingredients

1 loaf of Coles Original Garlic Bread
1/2 pound of shaved corned beef
12 slices of swiss cheese or baby swiss
sauerkraut
thousand island dressing
caraway seeds (optional)

Panini press or heavy skillet to use as a press

Directions

Lightly oil panini press (or use a non-stick skillet to cook in and a heavy skill as a press) and heat to medium heat.

Open Coles Original Bread and toast what will be the inner side of the sandwich lightly under the broiler.

Construct sandwich by opening Coles Original Garlic Bread. Open and put six (6) slices of swiss cheese on each toasted side of the bread. Slather each side with thousand dressing and sprinkle lightly with caraway seeds. (use as much or as little of these ingredients as you like). Add the meat. The meat should be piled lightly on the sandwich – not laid flat in slices. Last add the sauerkraut. Close the sandwich and place in panini press.

Grill the sandwich in the panini press until the cheese is melted and the bread is toasty and crunchy. (if the press is preheated correctly this will only take about 3 to 5 minutes.) Watch it carefully – because of the butter and oils on the bread, the panini will burn if you are not careful.

Enjoy! This is delicious served with a crunchy, dill pickle and chips, or with steaming hot bowl of your favorite soup.
