Heart Panzanella Salad - 4 servings

Ingredients

One Cole’s Mini-Loaf
One 12-oz. bag mixed salad greens
4 Roma tomatoes, cut in eighths
1 medium cucumber, peeled and sliced
one half red onion, thinly sliced
1/4 lb. salami, cut in 1/2 inch cubes
1/2 cup extra virgin olive oil
1/4 cup aged balsamic vinegar
1 teaspoon dried oregano (or one tablespoon fresh)
1 tablespoon fresh, shredded basil
1/2 cup shredded Parmesan cheese

Directions

  1. Preheat oven to 400 deg.
  2. Open Cole’s Mini-Loaf and place both half’s, cut side up, on cookie sheet.
  3. Bake until crisp and golden brown.
  4. Cool slightly and cut into large cubes.
  5. In large bowl, whisk together olive oil, vinegar, oregano and basil.
  6. Toss together with greens, tomatoes, cucumber, onion and salami.
  7. Sprinkle salad with shredded cheese and garlic bread cubes.
  8. Toss lightly and serve.
