Heart Panzanella Salad - 4 servings
Ingredients
One Cole’s Mini-Loaf
One 12-oz. bag mixed salad greens
4 Roma tomatoes, cut in eighths
1 medium cucumber, peeled and sliced
one half red onion, thinly sliced
1/4 lb. salami, cut in 1/2 inch cubes
1/2 cup extra virgin olive oil
1/4 cup aged balsamic vinegar
1 teaspoon dried oregano (or one tablespoon fresh)
1 tablespoon fresh, shredded basil
1/2 cup shredded Parmesan cheese
Directions
- Preheat oven to 400 deg.
- Open Cole’s Mini-Loaf and place both half’s, cut side up, on cookie sheet.
- Bake until crisp and golden brown.
- Cool slightly and cut into large cubes.
- In large bowl, whisk together olive oil, vinegar, oregano and basil.
- Toss together with greens, tomatoes, cucumber, onion and salami.
- Sprinkle salad with shredded cheese and garlic bread cubes.
- Toss lightly and serve.
