Roast Pork Loin on Garlic Bread - 4 servings

Ingredients

2 Coles garlic breads
2 1 1/2lb. Pork Tenderloins Trimmed
1 C. Oriental Garlic Sauce
1 C. Hoison Sauce
1/2 C. Duck Sauce or to taste

Directions

  1. Place pork in a heavy duty plastic bag.Combine the garlic & hoison sauces, pour over the pork & seal the bag.
  2. Turn the bag to coat the pork loins.
  3. Refrigerate for 4-8 hours,turning the bag occasionally.Remove the bag from the refrigerator & let rest at room temperature for 30 minutes.
  4. Preheat oven to 375 degrees. Line a roasting pan with foil.
  5. Place the loins with the sauce on the foil.
  6. Roast turning & basting often for 30-40 minutes. Meat should register 160 degrees on a meat thermometer.
  7. Remove from oven & let pork rest for 10 minutes.
  8. Meanwhile bake the breads according to package directions.
  9. Slice the pork as thin as you can.
  10. When bread is ready place the pork slices on the bottom half of each bread, coat the other half of the bread with the duck sauce & place over the pork.
  11. Slice each loaf in half & in half again.
  12. Place 2 pieces on each plate.
  13. Serve warm with french fries, coleslaw, baked beans and pickles.
