The Best Garlic Veggie Sub

Ingredients

1 16 oz package Cole’s Garlic Bread
4 slices Pepper Jack Cheese, cut in half
3 cups baby spinach
1/2 cup thinly sliced red onion
1/2 cup roasted red pepper strips
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1/4 cup sliced ripe olives
4 slices ripe tomato

Directions

Separate the Cole’s garlic bread and arrange the cheese slices over the top.
Bake according to package directions, until the cheese is bubbly.
In a medium mixing bowl, toss the spinach, red onion, roasted red pepper, vinegar, and olive oil to coat.
Arrange the salad mixture over half of the garlic bread and top with the olives and the tomato.
Top with remaining garlic bread and press down gently.
Secure with toothpicks and cut in half.
Serves 2 or 4.
