Bruschetta Salad

8 slices Cole’s Texas Toast, cubed
1 1/4 cup red onion, thinly sliced
1/4 cup red wine vinegar
1/2 cup olive oil
2 teaspoons minced garlic
1 oz. Fresh basil, finely chopped
1/2 cup Parmesan cheese
1 container Cherry Tomatoes, cut in half
Combine tomatoes, Cole’s Toast and red onion. Combine Red wine vinegar, olive oil and garlic for dressing (let sit in refrigerator for at least 30 minutes). Combine the two mixtures together. Add basil and Parmesan cheese one night before serving.
