Garden Vegetable Bruschetta


½ cup Pizza Sauce of choice

½ cup sliced red onion

1 cup diced yellow summer squash

1/3 cup extra-virgin olive oil

2 T chopped fresh basil

1 garlic clove, minced

1/3 cup freshly grated parmesan cheese

1 cup shredded mozzarella cheese

Salt & pepper to taste

Cole’s Bistro Garden Mini-Loaf



In a medium bowl, combine red onion, diced summer squash, extra-virgin olive oil, basil and minced garlic. Mix well. Place Cole’s Bistro Garden Mini-Loaf on baking sheet and spread the pizza sauce evenly on top. Spoon your vegetable mixture on top and complete with parmesan and mozzarella cheese. Bake until melted and heated through. Garnish with fresh basil.
