Garlic Grilled Cheese Sliders with Tomato Soup

Garlic Grilled Cheese Sliders with Tomato Soup

Ingredients:

1 package of Cole’s 12 slice Garlic Toast

12 slices of cheese of your choice

4 tablespoons unsalted butter

1/2 large onion, cut into large wedges

1 (28-ounce) can peeled or crushed tomatoes

1 1/2 cups water, vegetable stock, or chicken stock

1/2 teaspoon sea salt, or more to taste

 

Directions:

Melt butter over medium heat in a large saucepan. Add onion wedges, water, can of tomatoes with their juices, and 1/2 teaspoon of salt. Bring to a simmer. Cook, uncovered, for about 40 minutes. Stir occasionally and add additional salt as needed. While soup cooks, prepare grilled cheese sliders, by placing garlic toast on a griddle. Grill for 30-60 seconds and flip. Add cheese to half the slices and combine into a sandwich. After 40 minutes is up, blend the soup, and then season to taste.
