- Cole’s Garlic Mini-Toast
- 1 stick sweet butter
- 1-2 tablespoon fresh or minced garlic
- 2 lbs large, fresh cleaned shrimp or prawns
- 3 tablespoons olive oil
- 1/4 cup white wine
- Lemon wedges
Melt butter in large skillet on medium heat. Add oil, garlic and wine. Add prawns and sauté until firm and lightly pink. Place several slices of Cole’s Garlic Mini-Toast on plate and pour the shrimp scampi on top. Squeeze lemon over and serve.
