Mac and Cheese
Sloppy Joe on Texas Toast

Cook time:  20 mins

Serves: 4

Ingredients

1 package of Cole’s Texas Toast
1 box macaroni & cheese
1 tbsp butter
1 tbsp olive oil
1lb ground beef
1/3 green bell pepper, minced
1/2 large yellow onion, minced
3 cloves garlic, minced
1 tbsp tomato aste
2/3 C ketchup
1/3 C water
1 tbsp brown sugar
1 tbsp yellow mustard
3/4 tbsp chili powder
1/2 tbsp Worcestershire sauce
1/2 tbsp kosher salt
1/4 tbsp black pepper
1/4 tbsp red pepper flakes, optional

Directions

Heat butter and oil in large skillet over medium/medium-high heat. Add beef and brown, breaking apart into crumbles as it cooks–approximately 5 minutes. Transfer to colander to drain. Add onion and bell pepper to same skillet and cook 2–3 minutes, until soft. Add garlic and cook 30 seconds or so, until fragrant.

Add beef back to the skillet and add tomato paste. Stir well. Add ketchup, water, brown sugar, mustard, chili powder, Worcestershire sauce, salt, black pepper, and red pepper flakes, if desired. Stir well to combine. Cook over medium heat for 10–15 minutes, until mixture has thickened to your liking.

In the meantime, prepare macaroni and cheese and Cole’s Texas Toast according to package instructions. Remove the sloppy joe mixture from heat and serve over the Texas toast, adding your desired amount of mac & cheese. Enjoy!
